Reception Recipes – Taco Salad, and Chinese Noodle Slaw

This taco salad recipe is the best! Every, and I mean every time I take it to a party someone asks  for the recipe. Be sure and use iceberg lettuce, the others just get soggy. And, it’s best to put it together at the last minute. The secret ingredients are the Nally Hot Chili and the Light Catalina dressing. Enjoy!

Taco Salad

1 lb. hamburger

1 green bell pepper chopped

½ large onion chopped

1 can Nalley Hot Chili

I 16 oz. bottle of Kaft Light  Catalina dressing

1 head iceberg lettuce

1-2 tomatoes chopped

Grated cheese (add what you like)

1 small bag taco chips (crushed)

Brown: hamburger, bell pepper and onion. Drain grease, then add the can of Nalley Hot Chili. Heat mixture and then set aside to cool.

In a large bowel add: 1 head iceberg lettuce chopped, 1-2 tomatoes chopped, grated cheese (add what you like). When ready to serve, add the hamburger mix to the lettuce, tomatoes, and cheese. Add crushed taco chips and from ¾ to the full bottle of Catalina dressing. Stir and enjoy. This makes a big salad. It does not keep well, so it should be eaten the same day as prepared.

Chinese Noodle Slaw

1 med. head cabbage, chopped

5 green onions with tops chopped

2 pkgs. Ramen noodles

½ c. butter

 1 Tbs. sesame seeds

½ c. slivered almonds

Dressing:

 ½ c. vegetable oil

 1 Tbs. soy sauce

1/3 c. sugar

¼ c. vinegar

In a bowl, combine cabbage & green onions and set aside.

Break noodles into small pieces and brown in a skillet with butter, sesame seeds, & almonds. Let cool slightly and then combine with dressing. Add to the cabbage mixture and then serve.
